Hank I don't know and that's probably a good thing for me to learn. All of our dirty wastewater is typically flushed into their drains before the grease trap.

Hank, I was reviewing this thread and still don't have an answer as far as "regulations" are concerned. I do know this: The kitchen managers love for us to drain the used caustic before the grease trap. It helps to clear out their lines and grease traps.

CLEAN AND GLEAM ,over here down south is that they way you do it RAY ,scrape the top layer of then spray the lower layer of grease .Then rinse with steam cleaner , if so a think all be offering this soon , may have to join the B&SE ,, AND HVAC , Ventilation regulation bodies dont know if i need to join all look into it more first. Its how much would you charge for this service , over here in the UK

KEC was the first experience I had in the cleaning industry in 1983 in Illinois. A lot has changed since then, and I have nothing but respect to those who clean KEC. From cut fingers on filters and hood edges to globs of grease in your hair....not to mention that "special smell" of the company truck!
What are you using to hold up your plastic sheeting? I know there was a company called Tarp Gator but the website is down and the facebook page is useless. Large magnets and clamps might work too but I figured I'd ask you first.

couple of things, first wooden shims ( for windows and doors) typically on the back wall. then on the front & sides we typically magnet, clamp, or tape. I've seen the tarp gator, looks good, but encountered too many situations where it would not work.

Hey guys is this kind of work impossible for one guy or do I need at least 2 onsite? I have a chance to bid out a restaurant tomorrow and have kicked the idea of KEC for awhile now.

Sorry my answer was so short, was in the middle of something. Let me break it down a little better:
Most of KEC (80%) can be done by one guy. However to properly clean a hood, you'll need roof access, and it gets pretty slippery up there with all the grease. Theres just too much chance of something happening, plus you're typically doing it in the middle of the night when no one else is around.
When you are properly masking a hood it really is a big help to have two people, also when you masking fails ( which it will) its nice to have an additional set of hands on deck.

hi guys can anybody send me any info about KEC equipment and chems to use as winter is not far away i am going to take a course here TR19 it gives me the certs for insurance for restaurants but a don't think the roll like you guys roll , speaking to a guy in UK that says they use a heat gun and scrapper . that sounds like hard work .
