It never ceases to amaze me how many restaurants, to include chains, who have no clue what they are getting. It's all about how cheap!

I've seen one worse. When I was roofing I got a call from a Mexican restaurant that was forced to close until they got not only their fan cleaned but the shingles too. Shingles were soaked in grease all the way down the back side of the restaurant. It had been dumping all over the roof for who knows how long. We decided the best and quickest solution was to tear out 15 squares of shingles and replace them before they could get reinspected. Most restaurant owners are super-cheap, but it's disastrous when they lose days of business cause they got shut down by the inspector.
Saw this from the interstate, they had there hood clean the week before. We are cleaning the fan Monday night we now have both of there restaurants.
