I thought it was actually bleaching the color from the vegetation. Im sure there is a more scientific way to say that.

Its bleaching it. Then it dies. The salt also helps it turn white as well.

The SH actually removes the chlorophyll (what makes it green) from the plant. It's like draining the blood from an animal. No blood no life.
